- Prepare and plate salads, crudos, ceviches, and raw bar selections (such as oysters, shrimp cocktails, and seafood towers) to the highest quality standards.
- Maintain a clean, organized, and fully stocked salad and raw bar station.
- Ensure all ingredients are fresh, properly stored, and prepped for service.
- Shuck oysters, handle seafood with proper technique, and ensure precise portioning.
- Follow recipes, portion controls, and plating guidelines for consistency.
- Work efficiently in a fast-paced environment while maintaining attention to detail.
- Follow food safety and sanitation protocols, particularly in handling raw seafood.
- Assist with inventory management, stock rotation, and ordering of raw bar ingredients.
- Collaborate with chefs and other kitchen staff to ensure smooth service.
- Adapt to menu changes and accommodate special requests when needed.
- 1-2+ years of experience in a professional kitchen, preferably in an upscale or fine-dining setting.
- Experience working with raw seafood, including oyster shucking, ceviche preparation, and crudo plating.
- Strong knife skills and ability to work with fresh, high-quality ingredients.
- Understanding of food safety best practices, especially when handling raw seafood.
- Excellent communication and teamwork skills.
- Ability to work efficiently in a high-volume, fast-paced environment.
- Must be able to stand for extended periods and lift up to 50 lbs as needed.
- Availability to work flexible hours, including evenings, weekends, and holidays.

Our dining rooms offer either top-rated French-Mediterranean cuisine or authentic homemade Vietnamese and are joined by a stylish common bar.
The property features more hospitality experiences beyond the restaurants. La Petite Kitchen is a chef-driven cooking class studio and private dining room. Cache Cache is a secluded bar and event space. These spaces are open daily, great for groups, and are fun compliments to the restaurants.
